    This is one of Japanese friend taught me how to make the eggplants, it’s easy and delicious. The original receipt of it needs to fry eggplants in the oil, similar to deep fry. Here we use AirGO air-fry function to cook this dish with less oil and better taste.

    Prepare Ingredients

    - Cut long eggplant into half horizontal and then vertical.
    - Then slice the skin part of the eggplant as a diamond shape, soak it in the water for use later.
    - Pour about a half a cup of Japanese soup base for noodle ( you can find in the Asian grocery store) with a half cup of water.

    Cooking with AirGO

    - Set AirGO air-fry function for 400F 10 mins with 3 tablespoons of oil
    - After preheating, place eggplants in the pan with the skin down first.
    - Once the LED shows FLIP, flip the eggplant, cook until times up.
    - After cooking, place the eggplants in the prepared sauce, garnish some green onion before serving.
