    Prepare Ingredients

    - Remove seeds from bitter melon and chop them into small dice.
    - The next step is only if you don't like the bitter taste. Add some salt, mix in with the diced bitter melon, set for about 10 mins, and squeeze the water out.
    - Beat 3 eggs and add Japanese soup base for noodles, mix well!
    - Then add drained bitter melon in the egg wash.
