Coarse Salt Baked Quail Eggs is a common street food in Chinese markets. It requires the use of rock salt to bake quail eggs with Szechuan peppercorn and cinnamon sticks, creating a distinct, unique flavour within the quail eggs.

AirGO oven function like a mini oven for small quantity baking, temperature could be controlled evenly and short amount of preheat time.

The Coarse salt can be reused for marinate (dry rub) duck, chicken or pork.

Steps

Done

- Rinse off quail eggs
- Preheat AirGO oven function for 300F 40mins
- Add one layer of coarse salt in the 8 inch baking tray
- Add quail eggs in to the salt evenly
- Add cinnamon stick and szechuan pepper corn
- Cover eggs with more coarser salt
- Put the baking tray into AirGO after Preheat
