This is a typical South China Dish ( Cantonese dish) that you can find in the local restaurant, you might see “Fried Dace with salted Black Bean in Oil” in the can in Asian supermarket, but will never try to buy it. So, here is the description in the can, the fish meat is no longer soft but sort of “jerkied”, creating a nice slightly chewy texture with fermented black bean in oil. Therefore it’s a perfect flavor with textured ingredients for cooking with A Choy ( a type of lettuce)
