    This is a typical South China Dish ( Cantonese dish) that you can find in the local restaurant, you might see “Fried Dace with salted Black Bean in Oil” in the can in Asian supermarket, but will never try to buy it. So, here is the description in the can, the fish meat is no longer soft but sort of “jerkied”, creating a nice slightly chewy texture with fermented black bean in oil. Therefore it’s a perfect flavor with textured ingredients for cooking with A Choy ( a type of lettuce)

    As a lot people know, lettuce contains a lot water, it hard to control the heat for the color and texture. Cooked A choy has unique aroma which you can’t not like it.

    Prepare Ingredients

    - Open the can of the Fried Dace with Black Beans in oil, it usually came with 2 dace and some black bean in oil, wen only need one dace and half of black bean in oil, keep rest of them for next time.
    - Break the dace to small piece, you can remove the main bone or not, separate the bean and dace
    - Slice 2 garlic cloves and about 4 pieces of ginger
    - Clean A choy and take each leave and break in half. drain it well ready for use.

    Cooking with AirGO

    - Set AirGO grill 400F about 10 mins with lined parchment paper
    - After Preheat, add ginger, garlic and dace with a bit oil, cook for 3 mins, once it bubbling, you can smell the drooling smell came out of the machine, its the time to add A choy in the pan.
    - Add half of A choy in the pan, then add black bean with oil, then cover with other half of A choy.
    - Cover lid, cook until indicator show "Flip"
    - Then open the lid and add some salt, mixing all together ,cook until times up.
    You can tell from the picture, the A choy color looks fresh green, and I can tell you the bite of the A choy is crunchy with unique umami!
