“Fried” Cauliflower Rice

Ingredients

Adjust Servings:
1 head cauliflower
1/2 cup vegan egg (optional)
1/4 teaspoon black salt (if using vegan egg)
2 tablespoons water (or 1 teaspoon olive or canola oil)
2 teaspoons minced garlic (2 cloves)
1 carrot diced
1/2 cup frozen green peas or shelled edamame
1 cup diced shiitake mushrooms
2 tablespoons soy sauce
1 teaspoons sesame oil
4 scallions (white and green parts)

“Fried” Cauliflower Rice

1. Cut the cauliflower into florets and place in food processor. Use the chop function to pulse until the cauliflower resembles rice. Set aside.
2. Attach AirGO Stir Fryer’s Large Gear Assembly, and place the Stirring Paddle in the center of cooking pan as per the User Manual. Ensure the gears and paddle are positioned properly.
3. Press [power] button to turn on AirGO.
4. Press [function] button to select Stir Fry.
5. Adjust temperature to 420°F.
6. Adjust time to 15 minutes.
7. Press [start] button. The AirGO starts preheating, and the display shows “PrE”.
8. When preheating is completed with “PrE” flashing and a tune, pour the vegan egg into the cooking pan. Add the black salt. Cook for 2 minutes (until 13 minutes left on timer) Pause cooking and remove the egg from the cooking pan and set aside.
9. Add water (or oil), garlic and carrot to the cooking pan and resume cooking for 3 minutes (until 10 minutes left on timer).
10. Add the frozen peas or edamame and cook for 2 more minutes (until 8 minutes left on the timer).
11. Add the cauliflower and cook for 5 minutes (until 3 minutes left on the timer).
12. Add the mushrooms, reserved vegan egg, sesame oil and soy sauce to the cooking pan and cook for the final 3 minutes.
13. When cooking time is completed, the LED displays “End” with 4 long beeps. Carefully remove the robotic arm.
14. Press [function] button to select “Air Fry.”
15. Adjust temperature to 400°F.
16. Adjust time to 3 minutes.
17. When preheating is completed with “PrE” flashing and a tune, quickly lift the lid and use a spatula to scramble the rice before allowing to cook for 3 minutes.
18. When the flip reminder goes off, use a spatula to scramble the rice again.
19. When cooking time is completed, the LED displays “End” with 4 long beeps. Remove the cauliflower rice from the cooking pan and serve, garnished with scallions
